Ingredients

Serves 4

Approx 200g chorizo, sliced
1 onion, finely chopped
1 red pepper, finely chopped
3 cloves garlic, finely chopped
1 chilli, finely chopped
2 tsp turmeric
1tbsp Cajun spice mix
100g frozen peas
1 can black eye peas, drained
250g brown basmati rice
500ml vegetable stock

Use normal sausage or bacon in place of the chorizo. you could also use white basmati rice, just reduce the liquid to 250ml and cook for 15mins.

To make this extra special, add a couple of handful of raw tiger prawns or langoustine 5mins before the rice has finished cooking.

Brown Rice Jambalaya

A spicy one-pot rice dish, perfect for using up any vegetables lurking in the fridge. We use black eye beans and brown rice to make this even healthier.

Leave out the sausage to make this vegetarian.

Recipe

Heat a large frying pan, preferably one with a lid. Add a little oil and fry the chorizo until the paprika oils ooze into the pan. Add the onions, peppers, garlic and chilli and fry for about 5mins.

Sprinkle over the paprika and turmeric and fry for another minute. Tip in the rice, peas, and beans and stir well so that everything's coated in the spicy oil. Pour in the stock, bring to the boil and simmer for 30mins until the rice is cooked through. Check for seasoning and serve.
