For Simple Cream Cheese Icing you will need...

125gcream cheese or mascarpone
250g icing sugar
90g soft unsalted butter
½tsp vanilla essence (or cinnamon)
½ lemon (or 1 lime), juice only

Makes enough to fill a sandwich cake or ice 18 cupcakes

Here's how...

Soften the cream cheese and butter with a wooden spoon.
Slowly mix in the icing sugar.
Now add the vanilla and lemon juice and stir well.
